Living in LA and travelling to Palm Springs on a regular basis means 100F+ temperatures are not uncommon, and anything that can lower oil/coolant temps is most welcome so my question is this has anyone installed the DeWitts oil cooler on their C7? What were the results?

I run RedHot regularly in 100+ temps with the AC running, here in and around Vegas. In my experience, the oil temp stays quite normal unless one is very aggressively/enthusiastically driving, which I would hope you aren't planning on doing on your regular LA-Palm Springs runs.
